How to Get Rid of AI Assistant in PDF?

Recently, an AI Assistant, which looks like it may be a Beta, has showed up on my PDF documents. These documents are no longer opening properly. Anyone know how to get rid of the stupid AI thing? I need prior year tax documents, but large areas of pages are blank because they're not opening properly

Besides the document issue, I don't like the SNOOPING

Unfortunately, generative AI doesn't show up under preferences, and I can't find it anywhere else

However, disabling New Reader seems to have fixed it, AND the easy-to-use menu is back
